Salmon with a Sour Cream and Chive Baked Potato

I just had this for lunch and thought I would post it.  A fairly self-explanatory recipe but such a great combo if you are in need of some meal time inspiration.
Ingredients: 1 baking potato, 1 salmon fillet, a handful of water cress, grated cheddar cheese, sour cream, chives, a squeeze of lemon.
  • Put your potato in the oven and back for 1-1.5 hours depending on size.
  • Pan fry your salmon fillet. The best way to do this is to pat the skin dry, and place skin side down in a frying pan on medium heat. Keep it frying gently until the bottom edge is a caramel brown colour, then flip for the last couple of minutes.
  • Cut open your potato and fluff it up with a fork and butter, add some cheese and then fill with sour cream and chives.
  • Dress the water cress with olive oil and a squeeze of lemon.
  • Plate up and tuck in!
