Shrimp, Scallop and Chorizo Paella

I'm sure there are many approaches to cooking Paella, this one is mine. All in one pan which is easy and you can add other ingredients at whatever stage you want. 

Ingredients (for 2 people) - 1 white onion, 100g cooking chorizo (the softer one), 200g paella rice, 2 garlic cloves, 400ml chicken stock, 1 glass of white wine, 6 shrimps, 6 scallops, parsley. optional - A pinch of saffron.

1) Cut your chorizo in half-length ways and then into small semi-circle slices. fry these in some olive oil on a medium heat. Important- choose a frying pan with reasonably high sides and about 25 cm in diameter. 

2) Finely dice the onion and garlic, add these to the pan once the chorizo has some nice colour and the oil has turned scarlet.

3) Once the onion and garlic have softened, add the rice and stir it in for a minute. then add a splash of white wine.

4) Let the wine reduce for a minute then add the stock and bring it back to a gentle simmer. Don’t worry if your rice looks completely submerged - it will suck up all the stock! add saffron now if you have some.

5) Let the rice cook until the stock disappears and the grains are nearly cooked through (approx. 15 mins).

6) Then arrange your scallops and shrimps on top of the rice and let them gently steam until cooked though (3-5 mins).
